Marinated Tomato Basil Chicken Pasta

Serves 4

INGREDIENTS

  • 2 Chicken breast thinly sliced
  • 2 Lemons
  • 4 tbls Olive oil
  • 2 tbls. Dried basil leaves
  • ½ tbls Dried oregano
  • 1 tbls Granulated garlic
  • ½ tbls Onion powder
  • 1 tbls Granulated sugar
  • 2c. Cooked Pasta
  • 1oz. Low-sodium Parmesan cheese
  • Low sodium tomato juice if needed.

Cooking Instructions

Place chicken in a medium size bowl.

Zest lemons and cut zest into smaller pieces. Add to chicken along with juice, spices, sugar, and 2 tbls of oil creating a marinade.

Toss chicken to ensure that it is completely coated with marinade.

Cover the bowl and refrigerate for at least two hours.

After chicken has been marinated remove chicken, also remove any marinade ingredients, and sauté chicken in remaining oil until done and remove from heat.

Heat a separate pan and cook the marinade bring to a boil and reduce to a simmer for about two minutes (add tomato juice if needed).

Add cooked pasta and mix thoroughly. Separate pasta onto two dishes, top with chicken, and sprinkle with cheese.
