Homemade Granola
Yield: 10 servings (serving size: 1/2 cup)

INGREDIENTS

  • 6 cups rolled oats (Quaker round box)Cooking spray
  • 1/4 cup chopped almonds
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup dried apricots
  • 2 Tbsp brown sugar
  • 1/4 tsp Kosher salt
  • 1/3 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup pineapple juice
  • 1/2 cup almond extract

Method of Preparation:

  1. Preheat oven to 300 degrees.
  2. Combine first 5 ingredients in a large bowl, add syrup, honey, juice, and almond extract, toss well.  Spread mixture evenly onto a cookie sheet coated with cooking  spray.  Bake at 300 degrees for 45 minutes stirring every 15 minutes. Stir in cranberries and apricots. 

Cool fully.

Store in a Ziploc bag.
