Fall Spinach and Walnut Salad

Serves 6

INGREDIENTS

  • 1 bag prewashed spinach leaves
  • 2 each red apples, sliced thin
  • 1 can mandarin oranges
  • 4 oz. walnuts, chopped into pieces
  • 2 oz. blue cheese, crumbles(optional)
  • To taste salt and pepper
Method of Preparation:
    Place apple slices, mandarin oranges with some juice into a bowl and let sit.
  1. Place spinach into serving bowl, season lightly with salt and pepper.
  2. Add fruit mixture and toss.
  3. Place walnuts and blue cheese on top.
  4. Serve immediately.
